Creamy Garlic-Cauliflower Puree 6 Servings
2 (12 oz. packages) frozen steam-in-bag cauliflower florets
4 tablespoons melted butter
1/4 cup light sour cream
1/2 teaspoon garlic powder
Salt and Pepper to taste
2 tablespoons chopped chives, optional
Microwave the cauliflower in the bags according to package directions. Carefully open and drain off excess liquid. Transfer to bowl and add butter, sour cream and garlic powder. Stir to combine.
Puree until smooth (using immersion blender). Season with salt and pepper.
Garnish with chives, if desired. Absolutely yummy!
NOTE: Cauliflower may also be cooked on the stove, and then follow the remaining directions.
